My favorite MATLAB demonstration is the Loma Pieta Earthquake demonstration because it uses real data (from an accelerometer in a building at UC Santa Cruz) and shows the power of manipulating data (analyzing and making visualizations of earthquakes) for real-world purposes in MATLAB.
