My favorite MATLAB demonstration was the "Graphics: 3D Plots" because one of the major uses of MATLAB is to generate plots that are not easily drawn by hand. The demonstration showed a lot of different ways that MATLAB could depict a 3D plot - even ways that I never thought about. For example, the contour plot is actually a 2D representation of a 3D graph. I also thought the code for a quiver was cool because it appears to be really 3D, although it is just arrows of different lengths pointing at different directions. This demonstration helped to get me excited for what MATLAB has to offer.
