My favorite demonstration is contourslice in 2D and 3D plots. contourslice uses the flow data set to illustrate the use of contoured slice plane. Some surface are really hard to imagine, but contourslice helps me to visualize the surface. Also, the example generated is so cool, which gives me a feeling of galaxy.
