I really liked the earth's topography demo. I think it is really cool to graph basically anything -in this case the earth-  with just a bunch of data. What I liked the most about this demonstration is that it showed many of matlab's plotting capabilities by only using the different maps of the earth. The demo begins with a contour of the earth in a 2D plot. Afterwards, matlab adds elevation to the same 2D plot. Finally, it shows the earth's map with altitude in a 3D plot.
