My favorite MATLAB demonstration is the graphics: 3-D surface plots. I simply love how a bunch of numbers can be represented graphically in an appealing, 3-D figure. The way the colors change with the gradient creates an interesting and aesthetic dynamic. It's complex, but truly mesmerizing.
