My favorite MATLAB demonstration is the "3-D Plots" Graphic. I think this type of graphic is very useful when creating topographical maps such as those in the Google Maps application. Not only can 3-D Plots indicate height and depth through shading, but also through the red coloration of peaks and deep blue coloration of troughs.

My Favorite MATLAB Demo
