The MATLAB demonstration I found most intriguing was "Functions of Complex Variables" because I learned a little bit about MATLAB's capacity to plot the functions of extremely complex variables. Using the color map command, one can generate amazing looking 3-dimmensional planes that are easy to interpret – a useful tool for geometrically understanding the functions of the complex variables being used.
