My favorite Matlab demonstration  is "Loma Prieta Earthquake". Although I can't completely understand the codes yet, but I do hold a strong interest in exploring earthquake statistics and I think it is really cool that Matlab allows users to put complicated data like this into plots. The graphs are pretty and are helpful in helping readers visualize the data.
