My favorite MATLAB demonstration is Klein Bottle, which displays a self-intersecting Klein bottle. I like it best because it gives me the insight that MATLAB can not only visualize data in 2D and 3D spaces, but can also display things that only exist in the 4D space, which allows countless possibilities of what we can generate with MATLAB in the future.
