Matlab Demonstration
My favorite Matlab demonstration was Convert Between Image Sequences and Video. I find it fascinating that, with a few commands in Matlab, one can create a video from a series of pictures. This demonstration showed me that Matlab's functions have a variety of applications that, to me, seem remarkable.
