My favorite demonstration is the 3-D Plots demo under the Graphics section. Being able to plot 3-D graphs as well as contour plots and vector fields is incredibly relevant to what we are studying currently in math class and would be a useful tool to help visualize difficult problems. For example, in Chapter 13, our current chapter, we are frequently asked to give the domain, contour plot, or limit of a complicated function of two variables in homework, and to help conceptually understand the problem, I can plot the function on MATLAB and check my work to see if it makes sense. Thus, because of its current practical applicability for me, the 3-D Plots demonstration is my favorite.

MATLAB Demonstrations
