My favorite demo was "3-D Plots" because it showed something which can only really be done using a computer. Normally, it is hard to visualize a matrix or set of data on a 3-D model without a computer, but a seeing a Matlab display it is really interesting. Not only that, but Matlab can display 3-dimensional data in many different ways, like a mesh map, contour map, and quiver map.
