My favorite demonstration on matlab is Earth's Topography.  It is fascinating how a few commands have the ability to add color to a map or topography.  The 3-D map of the world is also amazing; looking through the commands it seems that one can control the lighting, color, and position of the picture with a few simple commands.  I am excited to learn to make pictures and maps on my own.
