My favorite demonstration is the Loma Prieta Earthquake example.  This demonstration particularly interests me because it utilizes the skills I have learned in this class and applies them to a real world situation.

This example first shows how to load the data, which was measured from an accelerometer (an instrument that quantifies the main shock of the earthquake.)  The demonstration then walks through the process of defining variables, and plotting graphs.  The earthquake's acceleration, velocity, position, and its trajectory are all analyzed by plotting various graphs.

Many of the MATLAB commands we learned in class were used to draw the conclusions.  I really enjoyed seeing how MATLAB, and my new skills can be used to examine real data and benefit society.
