My favorite demo was the Teapot one under 3-D visualization. I found this to be the one demo that truly took advantage of the graphic abilities available to Matlab. Instead of graphing functions, it took the visuals to a whole new level by programming the lid to be removable and shading the entire graphic to look realistic.
