MATLAB Demo
My favorite MATLAB demo would probably be the Minesweeper demo. I thought that it showcased a lot of the different capabilities of using MATLAB, not just the fact that it can do complex math, but that it could present a graphical interface to the user and take into account their actions as well and vary the output according to that. It was also an entertaining study break.
