My favorite demo in MATLAB would be the "Bending Truss." Essentially, the demo depicts a vierendeel truss, a bridge composed of triangular units and straight rods, literally bending itself. I admire the immense amount of coding that went into first designing the bridge, then manipulating the bridge to bend itself.
