My favorite MATLAB demonstration is Graphics: 3-D Surface Plots because I prefer the interactive demonstrations to those that just involve reading and/or watching. The 3-D Surface Plots demo was particularly interesting to me because I was able to easily change the plot type, shading, and colormap without knowing any of the coding; however, I was able to see the code in the command window adjust as I made these changes, and thus I was able to learn some of the coding as well.

MATLAB Demonstration
