My favorite example demo on matlab is the "Basic Matrix Operations". It introduces how to create and plot various matrices in a clear, step-by-step format and also includes visuals to help understand what you are creating. It helped me grasp a deeper understanding of the material we covered in the lecture section of EGR 103.
