My favorite demonstration was the Graphics>3-D Plots>Animations>Creating Stream Particle Animations. The animation was fascinating and I can only imagine that it has a variety of practical applications. The animation from the demonstration was physically similar to a tornado and appeared as though it could be manipulated to illustrate a variety of weather patterns. Additionally, having animations is 3-D personally helps me visualize three dimensions.
