My favorite MATLAB demonstration is the one on 3-D plots. Last year in my math class we used the program Mathematica, and my favorite tool of the program was the ability to 3-D plot. Having the ability to visualize different mathematical concepts and adjusting their color and transparency made the mathematical relationships more meaningful. Now, I'm very interested to see what kind of 3-D visualization can be utilized with real world data in an engineering context.
