My favorite demonstration is the 2-D and especially the 3-D plots demonstration because for Matlab plotting data seems to be like it will one of the most important functions we will use it for, and I have never seen 3-D plots of surfaces are very helpful way of visualizing data that would otherwise be very difficult for one to draw by hand or even see when looking at the data.

Favorite Demonstration
