My favourite MATLAB demonstration is the Teapot (in the section graphics) because I love tea, and also because I think it is really nice to see that you can do all sorts of things with MATLAB that seem unrelated to mathematics. Another one of my favourites is the Images and Matrices demo, because it shows another application of matrices that makes them applicable to art.
