My favorite demonstration was the "3-D Surface Plots" page because it explained in detail one of the most powerful parts of Matlab in terms of data analysis and graphical visualization. Knowing how to create both mesh-grids and surface plots can expand the power of manipulating variables into three dimensions which is infinitely more applicable in real world calculations.
