My favorite MATLAB demonstration is 'Matrix Manipulation'. The demonstration contains interesting information about how to mathematically manipulate matrices in order to extract the data one needs to perform a calculation or to plot values on a graph. It also explains how MATLAB comes equipped with many matrix operators which allow the user to find important data by performing quick calculations with one or more matrices.
