My favorite demonstration was the 3D Surface Plots demo.  In my multivariable calculus class in high school, we had to use winplot to plot any sort of three-dimensional space curves or surfaces, and although it worked well enough, it was not nearly as user-friendly and many times it didn't function properly.  In MATLAB, the surfaces and axes are much clearer and the interface is much easier to use.  Additionally, there are many more color and display options for the surfaces.
