My favorite demo:

I think my favorite demonstration was the earthmap.m demonstration which imported a map of the world, data points for the topography, and overlaid them with a sphere to create a topographical globe. It was interesting to see the breadth of things you can do in MATLAB and its real world applications. I'm definitely interested in experimenting with MATLAB's imaging and modeling capabilites.
