I found that the demonstrations page for 2-D Plots under Graphics was my favorite.  It was the most useful demonstration for the level of MATLAB knowledge that I have right now. The demo clearly shows the different type of plots that can be utilized in MATLAB and gives each a brief description. Plots are very important and they can be great visual aids if they are used correctly. This page offers an easy comparison among the different types so you can see which one would best serve your purpose.
