My favorite MATLAB demonstration of the ones I looked at this week was the Earth's Topography one.  It showed how we can use the simple commands we know in MATLAB to organize real world data and represent it visually in a plot.  It really brought the commands to life and helped put meaning behind all the symbols and numbers.  I enjoyed seeing the data come to life in a way that was tangible and represented something familiar, the Earth's topography.
